WHAT MAKES "GOOD JAM"?
Good Jam starts with using quality fruit, and plenty of it. Our berries come from the prime berry growing regions of the Pacific Northwest, on the west side of the Cascade mountains. Here the climate and soil are perfect to produce sweet, delicious berries, full of flavor. Recipes that use more of this fruit than sweetener let the true flavor of the fruit come through to your tastebuds. Cooking in small batches preserves the bouquet and the color of the fruit. Attention to detail brings you a delicious homestyle preserve, of the kind that a particular cook would have turned out in the farm kitchen of yesterday. It is in the Shepherd family kitchen on Maury Island that these recipies were first developed. We think you will taste the difference. The subtleties of choosing the right variety of berry, for flavor note and texture, removing some of the seeds so it isn't too chewy, are all part of making a special jam.
