Red Currant Glaze for Cornish Hens
After roasting Cornish hens, remove from pan. Leave 2/3 cup drippings in the pan and place on burner over medium heat. Gradually add 3 Tbsp. flour to make a smooth paste. Add 1 Cup of white wine, 1 Cup of Maury Island Farm brand Red Currant Jelly, 1 Tsp. dry mustard, and season to taste. Stir and bring to boil. Reduce heat and simmer until thickened.
